Our garden is in full force and I'm picking more and more tomatoes every day. Make sure to stop back as I'm planning to try out some new recipes!
Anyways, here's a quick salad to use cherry tomatoes. It's very refreshing especially when it's hot out and you don't want to do any cooking - which is me these days! We're on heat wave #5 and there's no end in sight for this one!
Dressing:
1/4 cup olive oil
1 tsp minced garlic
1 sprig of rosemary
1/2 tsp sea salt
1/4 tsp fresh ground pepper
4 Tbsp lemon juice
1/4 cup fresh parsley, chopped
Salad:
1 can (15 oz) cannellini beans, drained and rinsed
3 cups cherry tomatoes, halved
3 cups cherry tomatoes, halved
1/4 cup parmesan cheese, grated
In a small bowl, combine the olive oil and garlic and add the sprig of rosemary. Microwave for 1 minute and then set aside for 10 minutes for flavors to develop. Remove the rosemary and add the remaining ingredients to bowl and mix well.
In a medium bowl, mix dressing and beans together. Add the cherry tomatoes and parmesan cheese. Gently mix together. Refrigerate to chill salad.
