Black Bottom Cupcakes

I love black bottom cupcakes - the yummy cream cheese center with chocolate chips.

Cupcake ingredients:
1 1/2 cups flour
1 cup sugar
1/4 cup unsweetened cocoa powder
1 tsp baking soda
1 cup water
1/3 cup vegetable oil
1 tsp vanilla
1 Tbsp white vinegar

Filling ingredients:
8 oz cream cheese, softened
1 egg
1/3 cup sugar
dash of salt
1/2 bag of chocolate chips

Preheat oven to 350 degrees. Line a muffin pan with paper liners.

Mix together all the batter ingredients and fill muffin cups half way up.

In another bowl, cream together all the filling ingredients except the chocolate chips. When mixed well, add the chocolate chips. Drop 1/2 - 1 tsp sized spoonfuls into each cupcake.

Bake for 15 to 18 minutes until a toothpick inserted in the cupcake comes out clean.

Hi I came to your blog by way of some link. These look interesting but should there be some chocolate in the cupcake so that they get that brown colour? Thanks.

I have never made black bottom cupcakes before. It looks easier than they seem like they would be. I will have to try them!
