Bacon Wrapped Pineapple Bites


These are seriously the best appetizer EVER!!!! They're so simple to make and everyone seems to love them so far!

1 pound bacon
1 can pineapple chunks
1/2 cup brown sugar

Preheat oven to 375 degrees. Line a jelly roll pan with aluminum foil and then place a cookie cooling rack inside. Set aside.

Cut the bacon in half. Put the brown sugar in a shallow bowl. Take a half a slice of bacon and dredge through the brown sugar. Place a pineapple chunk on one end of the bacon and roll up. Secure with a toothpick.

Lay the bites on the rack and bake for at least 25 minutes or until bacon looks brown and crispy. Broil on both sides for a couple minutes to make them really crispy. Watch them while broiling as the sugar will burn.

Cool slightly and enjoy!
