Peanut Butter Nutella Swirled Cookies

Take a traditional peanut butter cookie and add some Nutella and you have these delicious, tasty cookies!



1/2 cup unsalted butter, room temperature
3/4 cup peanut butter
1/2 cup sugar
1/2 cup packed light brown sugar
1 egg
1 tsp vanilla extract
3/4 tsp baking soda
1/4 tsp salt
1 3/4 cup flour
1/4 cup Nutella (chocolate hazelnut spread)

Using a stand mixer, combined the butter, peanut butter and both sugars until light and fluffy. Add in the egg and vanilla and beat until well combined.

Whisk together the dry ingredients in a separate bowl - baking soda, salt and flour. While the mixer is on low, slowly add in the dry ingredients and mix until just combined.

Put the Nutella in a small bowl and microwave for 30 to 45 seconds. Drizzle over the cookie batter and fold in with a spatula. Place the bowl in the refrigerate  to chill for at least 15 minutes.

Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper. Remove the dough from the refrigerator and roll into small balls and place about an inch apart on the prepared baking sheets. Bake for 10 to 12 minutes until the edges are lightly browned.

Allow the cookies to cool on the baking sheets for 2 minutes and then move to wire cooling racks to completely cool.
