Cinnamon Raisin Bites

I'm always looking for healthier snacks for Madeline and this didn't disappoint. She's been a bottomless pit for the last 2 weeks. I'm waiting for her to shoot up like a beanstalk soon. These bites are similar to scones and are perfect a room temperature or warmed up. The best part - one is under 100 calories!

The batter is also perfect to change up the flavors. I can't wait to try dried cranberries and lemon!

2 cups flour
3 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 cup skim milk
1/4 cup canola oil
1/4 cup honey
1/2 cup raisins

Preheat oven to 425 degrees. Line a baking sheet with parchment paper.

In a large bowl, combine the flour, baking powder, salt, cinnamom and nutmeg. In a small bowl, combine the milk, oil and honey. Add the wet mixture into the dry ingredients and stir just until combined. Stir in the raisins.

Drop by tablespoonfuls onto your prepared baking sheet. Bake for 8-10 minutes or until lightly browned. Cool on wire racks. Makes 2 dozen bites.
