2 whole boneless, skinless chicken breasts, cooked and shredded
4 cups cooked brown rice¾ cups frozen corn
15 oz can black beans, drained and rinsed
1 cup low-fat sour cream (or plain Greek yogurt)
4 oz fluid can green chilies
½ cup salsa
1 cup low-fat cheddar cheese, plus more for topping
Preheat oven to 350 degrees. In a large bowl, combine all the
ingredients and mix together. Season
with salt and pepper. Transfer to an oven-safe baking dish and top with the
extra cheese. Bake for 20 to 25 minutes or until heated through. Garnish with
chopped cilantro if desired.
