Healthy Banana Cookies

I bought a bunch of bananas last weekend and they ripened too quickly for us to eat, so I started a search from something besides banana bread to make with them. I stumbled on this recipe from Allrecipes and made a few tweaks.


3 ripe bananas
2 cups rolled oats
1 cup raisins
1/3 cup applesauce
1 tsp vanilla

In a large bowl, mash the bananas. Stir in oats, raisins, applesauce and vanilla. Mix well and allow to sit for 15 minutes. Meanwhile, preheat oven to 350 degrees.

Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 20 minutes or until lightly brown.
I think next time I make them, I'm going to add a tsp of cinnamon to add a little flavor.
