Upside-Down Sausage & Mushroom Pizza

One of the mom's from my online forum posted this recipe months ago and I've been meaning to try it and finally got around to it tonight. I wish I wouldn't have waited so long! It's so good!!! It's adapted from a recipe from Food Network


2 tsp olive oil
1 lb sweet or hot turkey sausage, casing removed
1 cup onion, sliced
8 oz mushrooms, sliced (I used cremini)
1 cup pasta sauce
1 cup pizza sauce
8 oz mozzarella cheese, shredded (or more if you prefer)
2 eggs
1 cup milk
1 Tbsp olive oil
1 cup flour
1/2 tsp salt
1/4 cup Parmesan cheese, grated

Preheat oven to 400 degrees.

Heat oil in a large skillet over medium heat. Add sausage and cook for 3 minutes or until browned and cooked through, breaking up the meat as it cooks with a wooden spoon. Add onion and mushrooms and cook 2 minutes or until soft. Add sauces and bring to a simmer. Remove from heat and transfer sauce to the bottom of a 13x9 inch baking dish. Top with mozzarella cheese.

In a medium bowl, whisk together eggs, milk and oil until blended. Whisk in flour and salt until well blended. Pour mixture over sauce in pan. Sprinkle with Parmesan cheese. Bake for 25 minutes or until "crust" is golden brown. Let stand 5 minutes before slicing and serving.
